To reproduce this bug, catch any insect or critter, then instantly pause your game/open the inventory. If you are fast enough, you will get softlocked and forced to restart the day.

Sorry to hear that🙇♀️ As a temporary workaround, it might help to wait until the catch popup fully appears before opening your inventory. As opening it too soon after catching an insect/critter could cause the issue.
