My mythical pet was still growing and hadn't finished growing yet. I'm not sure when or what happened. Don't know anything other than suddenly they were not in the ground anymore, they aren't anywhere on the farm that I can find. Not listed under pets and never got a chance to name them even. I do have a sprinkler with a harvest thing on it, but I didn't see it in there either.

Noted! Could you send a screenshot marking where the mythical pet was previously located? And could you send your Save File and Backup Files here so we can take a closer look? To retrieve the files, you can copy-paste the following file path into your Windows Explorer: %localappdata%\ProjectCoral\Saved\SaveGames then compress the SaveGames folder into a ZIP file before sending it here.
