And right now, you can check out beta patch notes #coral-beta-changelist . Beta right now is a place for community to test patches and fixes before they roll out to everyone. And there you'll see that this has been fixed and all there is left to do is wait for the patch to be approved by consoles and released to everyone.

Not that I know of - it was the only one I was missing before 1.2 update, but I was able to get it.
My suggestion is to make a chest for each category, and make 1 of every item in that category to put in the chest (even if you know you've made them before [unless it's like aging barrels and you've got 100]), that way you can be sure you have every single item.
