Once I plant the saplings and they fully mature, can you use the architect desk to move them closer to each other and will they still bear fruit with no issue? Or must you leave that 5x5 space for each one?

Trees need a 3x3 space, not a 5x5, and you can technically put things beneath them like floor tiles, etc, but you can't group the trees up, to my knowledge
The 5x5 issue is if you're trying to plant it too close to the edge of a plantable area (the farm boundary, the greenhouse border)
