Can someone please confirm for me whether this is a deliberate mechanic or a bug?

I was looking in game at my "caught" fish list so I could see what I have left to catch and donate to the museum.

I know I have donated a Tuna and a Red King Arowana because I got them both while mining in the caves, but I have never caught either of them while fishing. Neither of these fish show in my "caught" list, presumably because I didn't catch them, but rather RNG from mining, but both have 100% been in my inventory and have been donated.

Is it deliberate that these don't show in my "caught" list because of that?

Yes, you have to actually catch them for them to show as caught

Great, thank you. Is there any way of tracking what you've donated but not officially "caught"?

Not an easy way. There unfortunately isn't a list at the museum itself. If you happen to catch another one, the 'donated' icon will be lit up
