Steps: I grew all the fruit tress (NOT saplings) over winter and when spring started, the trees that would have grown fruit through the season disappeared.

So load backup to 28th of the last season, play it again and not close the game until after the 2nd of the next season. So play the 28th and 1st in one game session. And trees will come back
