I upgraded my pickaxe to osmium and lost all the enchantments that I had on it previously upon retrival.

This happened to me with the pickaxe yesterday, too. Currently, my scythe is at the blacksmith for the upgrade and I'm sure that this will happen again.
Pickaxe and scythe had both 2 enchantments. Pickaxe lost both enchantments and I went to the village to enchant again (currently it has 1 new enchantment). I will update once I've picked up the scythe today.
I'll provide my save and backup saves.

Also, did you happen to enchant another tool in Giant's Village while the Pickaxe was still being upgraded at the Blacksmith? 😮

I cannot remember the exact day when I gave it to the blacksmith, I'm sorry. Maybe if your team looks through the backup saves you can find the day when I still had it and when it was already at the blacksmith.
I only remember that I didn't retrieve the pickaxe after the 4 days the upgrade takes but 6 days or maybe 7 since one day, the blacksmith was closed and I was busy with other things. I did my whole routine at the farm and stuff before getting it. The scythe, on the other hand, I got the moment it was ready and went immediately there after waking up without doing anything else before.
And no, I didn't enchant anything else while the pickaxe was being upgraded. But I enchanted the pickaxe while the scythe was being upgraded.
And between upgrading both from gold to osmium, I upgraded the hoe from basic to bronze. So first pickaxe gold -> osmium (lost both enchantments), then hoe basic -> bronze, then scythe gold -> osmium (kept both enchantments).
The pickaxe had rare drop and hit on drop, I think.

No, I did this on the current version when I played two days ago on Saturday.
Alas, I have no screenshots after I retrieved it. But I have a screenshot I made when I reported another bug before the upgrade (this was one in-game month before the upgrade, though, during spring - the upgrade was done in summer).
Your team can maybe check this in the backup save files, hopefully.

What happened right before: The only thing of note might be that I also upgraded my fishing rod from silver to gold. And that I couldn't pick up the pickaxe on the original date, because the blacksmith was closed.

Oh! Did you upgrade your Pickaxe at the Blacksmith and your Fishing Rod at the Beach Shack on the same day? If so, do you recall which one you upgraded first?

This happend to me also. I upgraded my pickaxe in 12 fall year 1 then got the upgarde at 16. I only upgrade the pickaxe no other upgrade thing on progress.

Hi everyone, I'm also part of the team and I’m here with some good news — this issue has been fixed in the latest version, v1.2-1241!
Unfortunately, the fix can’t restore enchantments that were already lost. However, you're free to reload your backup save file, and once you enchant your tools again, the issue won’t happen anymore.
