How do i unlock that forest above gaint village? and is there a way for me there to get hardwood with a silver axe?

Middle forest unlock - 6 offerings at the lake temple
Deep forest - 14 offerings
If you're in consoles bombs will work on your farm or there are some logs in the forest that have some free hardwood (specifically where the river is)
