Hey all, my wife recently wasn't able to load her save file on Xbox (she was in year 3 FYI)
To fix this we installed the Xbox App on Windows, the game data is linked to your account, so if you have gamepass ultimate it'll allow you to install the game on the Windows App.
I believe if you purchased the game on Xbox it should also allow you install it on windows, but I'm not sure.
What I am sure of is your Xbox account Save Game Data will sync to the cloud if you connect to the xbox service automatically, you do not need a subscription for this.
Boot up the game on PC, your save data will sync and it should load up where you left off. Save the game. Close the game and go back to your Xbox, the game will sync again and should load excatly where you left off.

TLDR;
Install Xbox app on PC
Sign in with you Xbox account
Install the game
Load Game on PC
Save Game and Quit
Load Game on Xbox
