I'm not sure it's a "bug" per se, but Emma mans the Taco truck even on days when the taco truck is closed. This is a very strange business decision 🙃
Repro Rate: At least on Wednesdays in the Spring, possibly other times.

The taco truck is even able to sell tacos when she isn't present (which is fine, the window is closed so I just assume she has a faceless helper or something), so it seems particularly odd that she shows up to stand in the window when it's closed.

Oh, didn't notice the UI disappeared when the 'closed' message popped. This was Y1, Spring 24 - Wednesday.
Ran back and she's still there, so between 10 and 11 at least.

Aaand I'm really really glad right now that you asked for the save.
While still in game, I quickly copied the 'current' daily save into a separate folder, planning to finish out the day and include that separately from the zipped saves. (Not because it would be different than the backup of the day, but just because)
... Then when I saved & quit... Steam decided to go absolutely bonkers. To fix it, I ended up having to restart the PC + reinstall steam. Successfully re-connected it to the libraries... And when it synced the cloud save for coral island, it just overwrote the local stuff with what it had backed up which was old. So this character was completely wiped out of existence, except for that one save I'd set aside for convenience... XD

To confirm there wasn't something related to whatever that was affecting this, I loaded the save up again now. Confirmed that Emma was in fact working in the truck on Wednesday, Spring 24 Y1 - a day when the truck is supposed to be (and is, functionally) closed. She got in ~ 9:30. So whatever fit Steam pulled was not related.
Here's my life saver save. The entire save folder is essentially unrelated at this point, so I'm going to not include that. Sorry.
She also leaves promptly at 18:00; so given it's open 9-17 on the days that it is open, she's a little late (understandable since the shop is closed), and takes an hour to close up from... not doing any business, except with Rafael who was there to get a taco and chill.
And he is allowed to bypass silly things like the shop being closed 🙂

Also the sign that would normally say the opening times still says "You can't buy anything from here", even when her shop is actually open and you can buy from her.
Her shop also doesn't appear in the map opening times list, making it really hard to know when it's actually open.

Here's my save for that day, as well as screenshots of when I saw it. For context, I'm a NG+ player who only started playing the full release in v1.1, and I have both of the DLCs. I'm happy to answer anymore questions or send more saves if needed!

Yeah, I saved the save, but then became disgruntled with it in summer and started over again... xD
As best I can tell, at least in Spring, she goes to her truck every Wednesday despite the fact it's closed all day. I forgot to confirm on the 3rd and 10th [was busy trying to make money], and since I see Nerd posted images and saves for the 17th I didn't bother with that (or the 24th which I already put up)
