I'm having the same issue. It's "collecting" the items, but not showing that it did and I can't collect anything. I also can't move it with a pickaxe

Reproduction Steps: Placed Auto Collector in underwater barn. Came back the next day and wasn't able to interact with auto collect and mermoos had been milked. Tried to move auto collector and can't pick it up with pickaxe. It's like it isn't there, but is still collecting from animals.

Having the same issue. Temporary solution is to go to the underwater ranch guy and ask him to move the barn somewhere else. You can then interact with the auto-collector and pull everything out of it, then go back and tell him to cancel the move.
This, however, causes another hilarious glitch where the space you were going to move the underwater barn to becomes another barn in a few days. So, extra barns for 300 coins.
