Title is hyperbole, it's not fully impossible, it's just about 100 times harder to get gems than it is fossils or artifacts. I've gotten every artifact and almost every fossil but still am missing 3 gems despite having made it through all four mines and more. Is there something I can do to make more geodes spawn? I am wearing the ring that helps with rare items already.

Remove the ring. According to my own experience it gives you more fossils instead of geodes, when i took it off i got quite a few more geodes.
The Savannah cave is also great to get more geodes. Be aware that water geodes are somewhat more rare then the others tho. Gl!

A solution that is a bit cheating but can work if you're missing only 1 or 2 gems is to have a few geodes in stock, then first thing in the morning you go open them and if you don't find the gem you needed inside your reload the day
