As the title suggests - this is a big problem with auto chests in particular. Playing on steam deck, wash confirmed a few days ago, and forgot to report.
I'm going to do an experiment too confirm on latest version when I next make some barrels but the fact that the auto chests have created exactly one aged item suggests the problem persists.

IIRC, aged items will indeed re-process to increase its quality as long as there's space for its quality.

Aged barrels work like this: you put an item in, you get the aged version out. You can then put that aged version back in to get a different quality right up until you get osmium. So your autochests will keep sending the item back to the barrels until they hit osmium.
If the chest sends back the osmium item then that’s the bug, not that you can put ages things back into the barrel.

Hello! I'm so sorry for the delayed response. Yes, yes. As hornkneebee and LibraryAndTea mentioned, the Aging Barrel can also upgrade the item's quality.
If you already have the Large Gesha Coffee in an Osmium quality and the Aging Barrel still receives it, please do let us know.
