I am missing two fish that I know I have previously donated. One of them being the Catfish. It is not listed on my journal in my menu but states that I have already donated it. I have tried to go back to the museum and give it again and it does not allow me to.

the fish that counted towards the journal are the one that you caught from fishing, you may have got the fish from somewhere else before. like trash can, or buying from sunny

I have cross referenced the number collected in the museum and it is missing from my count there

You can get catfish from trash cans, i see no star on your catfish so might have donated it from that. Journal only updates when you fish it yourself.
You can catch catfish during rain/storm at evening/night spring and summer in the ponds on your farm.
The other one you are missing is the Silver Arowana.
