Is there any difference in the four sea caves and the loot (fossils, coffers, etc.) you can find? I know you can occasionally find kelp depending on which level cave you’re at, but was wondering if there are any other differences.

The coffer that it gives is the one for that area. So 10m cave gives the ornate one etc.
sage tiger
coffer - all depths
ornate - 10m
shimmering - 20m
marble - 40m
pirate - 50m
mysterious - all depths
