I've been able to remove all the other rocks and trash around the border between the farmable area and the grass but am unable to get this one rock on the border. I'm not able to select the square either and there's no white box around it when I do try to mine it. It was a problem in the beta for me too but I didn't want to bog anyone down with something so minor.

I noticed the same issue, with this spot and another sand rock on the underwater farm. I'll give my info and try to catch pictures later to add.
Replication- two different saves (beta & official) unlocked the underwater farm and couldn't clear two sand rocks.
Platform: Steam (PC)

I also have this issue, but I have noticed that I can also not break rocks at the dig site that are on the boarder of the dig site or at the bottom of the stairs, might be the same type of problem. (PC/ Steam)
