I've read on the Coral Island Wiki that there was a planned level 3 for the barn and the coop; expanding to 12 animal capacity from 8. Do we have any ideas if this is coming in 1.1 or beyond with the addition of the ostrich and buffalo?

It's not coming with 1.1
We don't know if it's coming some time in the future or not
There's unfortunately quite a lot of stuff on the wiki that has never made it into the game - dye makers, fish nets, paths and furniture
It might be stuff they planned at one point and decided not to add, but the stuff is still in the code to be found
