Hello, I've had two gold quality Great White Sharks in my fish pond for >5 days now, how long until a new one spawns?

Hey Han! Usually it doesn't take five days to breed, have you reset the game lately? Sometimes those time-production pieces get frozen/bugged and need to be jarred loose.

That's the best way! Just quit to main and reload, or for an extra measure of certainty, quit the game entirely and reload.
