As stated in the achievement you need to ship everything under "..Found..." which includes Gems, which includes the Earth Gem, which as i understand it I can't get more of.

No, no need to ship them. They exist specifically to teach the player about enchantment and give the first five of them.
Think of them as Crystallized Earth Giant Energy.
