#1.0 or 1.1 beta?

Hi! I just downloaded the game and can't wait to start playing! I understand that there is a 1.1 beta version out. Would you recommend playing the 1.0 version or should I start with the beta right off the bat?

I would say start with 1.0
Beta is focused on trying to hammer out bugs - if you're just trying to play to enjoy, then 1.0 would be better to start off with. Just be aware that some things aren't in the game yet, and will be when the update hits.
You won't have to restart your save when 1.1 hits so if you want to be ready for some of the stuff in the 1.1 update you could work towards that while still just exploring what 1.0 has to offer, there's a decent amount to be found!
