I noticed the same thing happening with someone else as well (can't for the life of me remember who). I just wrote it off as Randy overseeing the lesson while the other one taught it.

Yes, yes. The backup file is approximately cover about 10 in-game days.
You can access it under this file path: C:\Users\ <username>\AppData\Local\ProjectCoral\Saved\SaveGames\Backup
