I'm thinking fairy roses and melons? I was going to put a bunch of fruit trees in there but aged melon wine and fairy rose mead is way more profitable.. what do you suggest for the greenhouse crops??

being able to ignore buy prices, by having trees that provide 3 fruit every 4 days is the best. 2nd best is the saplings, which are 2 fruit every 4 days edit: forgot to account for them taking up 4 plots. 2nd best is strawberry. if you plant the fruit trees optimally (not allowing for there to be any 3x3 spaces), you can fill up the rest of the space with strawberries (which you can also harvest every 4 days) without worrying about giant crops

in terms of fruit tree fruit value: 1. durian, 2. peach 3. almond
in terms of fruit plant fruit value: 1. cocoa bean (tho you can't do much artisan stuff with this one), 2. lychee, 3. jackfruit
in terms of other crops/day value: 1. strawberry, 2. sugarcane, 3. pumpkin

It also depends on how self-sustaining you want it to be. There's something to be said for filling it up with multi-harvest crops. Another consideration might be diversity of artisan machines - I have some Okra just to keep the mason jars busy...
