Since I really wanted to see the romance for multiple NPCs, I've made a duplicate of my existing active playthrough. I currently have 2 save files at the moment.
If I wish to reuse the save file, do I simply change the file name to "DailySave_3", 4, 5 and so on?
Similarly, I assume if I replace (or delete) the "DailySave_0" save file, it wont really affect anything correct?

Yes. You'll just change the last number and duplicate it as many times as you wish
And yes to the last question. If you just delete and replace the dailysave_0 file with a new dailysave_0- you'll just pick up where you were at
So if the copied file you're using is Spring 3 year 2 and that's your base- every time no matter it's name (so daily save 1, 2, 3, 54) whatever save number- you'll always starts af Spring 3 year 2
