I have made a mistake and set switch to next tab as E thinking it was the switch tool bar key bind, the problem is the save button for settings is also E so as a result whenever i try to apply settings it just switches to the next tab even when i click it with my mouse.
I have also tried:

switching everything to default (didn't work because it wouldn't apply)
switching to settings then closing my game with out hitting apply (worked for changing the game size on my screen but not for key binds
opening settings while the game is playing instead of in the title screen (resulted in the above)

Please help what do I do?

alternatively, if you have a controller you can possibly press confirm on your controller instead to change your keybind settings

The controller one ended up working for me! the app data one did not though
I still got it to work though thank you so much!!
