Okay so long story short, I missed the timeframe on Pablo's invitation when he asked me out on a date. I'm really hoping to see it, but it's been 2 seasons now and he still hasn't sent another letter. Is there a way to get him to send another one, or did I just miss the opportunity for the rest of my playthrough?

I do, yeah. Unfortunately for me, he sent it on the same day as the Tree Planting Festival, and I chose to do the festival thinking I could go on a date with Pablo sometime later

I couldn't trigger the event because it wasn't a sunny day, it also doesn't trigger on the same day as the letter. But to answer your question, I was able to trigger it a few days later because I had 3 windy days in a row
