Cloud seems to be the official version normally when I play with game pass, but if I install it on PC, it's the early access version, what's wrong with the installation version?

tbh afaik thats just microsoft weirdness
bc pc gamepass has always been the game preview (but always was stuck without needed hotfixes bc microsoft never released them when devs did)
vs now with full release xbox game pass has directly the 1.0 version
its my guess that microsoft simply was lazy or missed changing the title on pc gamepass to remove the 'game preview' part

As long as your version on PC or Console says v1.x you're good to go.
