Do you think that I can invest more than 2000 hours in the game if I like grinding, always things to do and collecting rare/exclusive items?

Yeah, it's possible. They'll be updating the game so that kids will "grow up" in a future patch / update, which can add more years / time to the game. My primary save on Steam was around 400 hours for Early Access, so there's still stuff to do even after completing the Land and Sea storylines: as you can just farm, mine, fish till you want a break. Also there's no "year cap" I believe,
As far as collecting the rare items, while the % to drop from stuff might be low, it's not "impossible" to get, so that you might find mixed input on.

There are some items that you get from breaking open geodes, coffers, fossils that have like a 1% chance, but if you were to have a surplus of those items, you may get lucky RNG on the first few openings and get said item. Just like in any other game, it's all RNG.
