I'm stuck on finding the 6th giant but was told he's not in the game yet, How do...
Keep playing. Improve your relationship with the giants and the townies. Go diving, if you haven't completed that questline already. There are limits to how far you can go with everything, but quests will show up naturally through gameplay.
And if you've got quests missing or the like, then go back to places you've been to before, like Earth Mine 10 for the Band of Smiles, etc.
