Tool Enchanting Strategy

Hello, I have fully fit the enchanting slots on my tool, but they are not the enchants i want. From what i understand from the wiki, if i use the add tab in the enchanting menu, if i get another enchant of the same type it boosts it's level. My question is, if i try adding new enchantments, can i overwrite another one, so i can get the enchant i want? or will it keep rolling levels for the already existing ones

The gist is- when you get an enchant you don't have and you want that one instead- you're going to just click on the one you want to replace
