I wanted to ask why the fertilizer does not stay in the soil after harvesting fruits and vegetables. I have also played Stardew Valley, there it remains in the soil the whole season

The fertilizer will only stay if the plant is one that regrows the crop. Otherwise it will go away whenever the crop is picked or dies out at the change of the season
