Are they both going to effect the quality of the crops that I harvest? The wiki says upgrading the plant will increase the chances of higher quality produce. Is that referring to crops or something else?

yes- so in game are seeds- which are your normal crops
plants- refer to fruit plants- which to add to your confusions are the trees in game that take up 2x2- so think dragonfuit, lemon- these need to be watered just like the crops do
fruit trees will eventually be in game and wont need watered

No- so if you’re in the lab, the white bag is fruit plant and those are in game
Brown bag is fruit tree and those aren’t in game right now
The fruit plants just look like trees
