Is there a way to slow down how long it takes to go through a day? By the time I’m done harvesting my food and watering everything it’s 6pm and leaves me no time to do anything else.

yep! open pause menu with esc - go to setting - game speed, can slide all the way down to 50% which will double the IRL time it takes to play an in game day 🙂

And you can harvest with the sickle. That Speeds Up harvesting time a Lot.

Also when you unlock the sprinklers you'll cut down on watering time a LOT. I can usually go out and do things (without petting my animals) at like 10am. but it's pretty rough in the early stages so hang in there!
