hi! I just bought a pig 5 days ago and always let my animals outside everyday. If I'm not mistaken, from what I read, pigs make truffle every 3 days, but I haven't found one since day 1. Is this a bug? or is anyone have the same issue?

You need to to have grass outside for them

Does this mean they won't find anything during winter?

Technically yes… but if you buy grass starter from Sam’s and plant it on sunny days it will last a couple of days. You have to keep planting every few days, but the pig will find a truffle. I’m on winter 19 and tried it a few in game days ago and got my black truffle for the altar.

so do you have to let them outside in winter? aren´t they going to be mad at that?

As long as it isn’t snowing they aren’t mad. If the ranch animals are out yours can be too.
