steam = beta (and usually updates sooner because microsoft is slow)
game pass= see above minus beta
also you can't get to your save files so if your file ends up corrupt on game pass you'd have to start over (you can technically get to them but it's a pain) - vs steam you can get to them and your back-ups and potentially save your file
