So I have completed the earth shaft and water shaft, the next shaft doesn't open at all. Is it just not available yet or am I doing something wrong?

Not available yet - the next 2 shafts are slotted in 2 separate content updates
Air/wind well get next in the summer content update
(Roadmap is on main game menu or #🧾coral-game-info if you want more details/the planned content to look at)
