Just wondering if it is generally always worth to turn crops into artisan goods or if there are some that loose value when processed. Thanks. :)

As far as I know ... yes, artisan goods sell for more due to the time and equipment it takes to make them.
But then you get recipes which sell for more than artisan goods.
so its a thing of where you wanna focus you time on and if you wanna farm money or just enjoy the game.
