Character stats, farm layout, inventory, money, and chest contents are all going to stay as far as I can remember. I wasn't able to find where the devs had said that though

On Alpha we had to restart many, many times. Most patches meant a new game start.
On the upside...you get faster at the beginning stuff! 😁
