I might be getting a Steam deck for Christmas and I’m wondering if I’ll have to start over or if there’s a way to transfer my game to a new device with Steam?

According to the Coral Valley steam store page it is playable on Steam Deck as long as you've purchased through steam.
If you mean if the save can transfer, I believe they're currently working on the cloud save function.
