how do i know once i have finished with the coral sights?

do you mean if youve cleared one area? or the whole area?

In early access, the coral sites can be cleared by activating the device (found from clearing trash) that floats to each shrine(?) device. Once you clear the path for each one, the area will be purified and allow you to dive further. If you reach a dead end (such as clearing all devices and finding no more paths) then you have just exhausted all of the early access material currently available. Future updates will provide more exploration, eventually!
