Does grass wither in winter? Should I rush and collect it from my farm before winter comes?

it does not, no. but you can't plant new grass in the winter

so if you have animals, plant a lot of grass before winter comes so that they can feed outside the entire season

it slowly withers. not all at once. I think i had a week before everything was gone

it shouldn't wither at all. did you have your animals out? if so they were eating it

i have 4 animals - i doubt that they ate all the grass lol. No it was a steady withering, and really evenly. I thought it was a cool mechanic

It does wither though, because the grass outside my animal pens slowly disappeared as well. Unless for some weird reason your animals can feast on anything growing on the farm no matter in there are fences between it and the grass or not...

They are able to eat some of the grass outside of fences, but only one or two squares past.
