I purchased the barn probably 2-3 in game days ago, and it's still not completed? I thought it took 1 day? Could it be a bug? Or is there something I'm missing?

I think the barn did take more than 1 day as I recall

Did you place it on your farm? You get the blueprint to place it in your inventory (and then it takes 2-3 days I think? Definitely more than one)

Ahh ok, it says in the store 1 day I think, but maybe that's wrong. Yeah it's on my farm, hopefully done soon then!
