My team and me consider self hosting sentry for our app.
Since we're not gonna use a lot. of features, I recently found the errors only mode, but I'm not sure if with it we can access the logs features or if we need the whole build with every containers ?

No, errors only only includes the listed features here: https://develop.sentry.dev/self-hosted/optional-features/errors-only/
The feature complete does include logs (but not listed) but it's not part of errors only.
