I have run flutter packages pub run sentry_dart_plugin, but still can't see some of the logs due to missing debug info.
If I just did this, should I be able to view old errors from production, or is this only available to me from the point of running the command forward?

Hey Jacob, if you have the dSYM files for the previous build that's missing the debug info, you can use the Sentry CLI to upload them. https://docs.sentry.io/platforms/apple/guides/ios/dsym/#sentry-cli
if you don't have the debug symbols, then yes only the build that have had their symbols uploaded to Sentry will have the symbolicated stack traces
