As is in DSRPG2, I assume you'll stick to the idea of demons disappearing in the day. I want to suggest 2 things.

Add a timer until night/day so I dont have to stress over getting places in time or end up going all the way across the map just for the npc to fade away before I kill it

Make day shorter than in DSRPG2, and make night longer.
If there was some reason you'd need it to be day for certain quests, then I guess it could be longer, but otherwise it's really annoying.
