How do I get a console version 1.21.72 to play on a 1.21.1 Java fabric server

The easiest way would be to just install floodgate + viafabric + viaversion on the server and setup geyser standalone
but if you already setup via proxy we can do that too

ok, geyser-standalone is basically like a separate server that only does the geyser part (same goes for viaproxy btw) so I'd recommend using minehut's free tier to host geyser-standalone

Would I have to setup a new server to play on? I’ve already got all the mods and whatnot on this one with some friends on a world we play on

No, also for geyser to work, you're server needs to be able to be joined with vanilla, so are you able to join with just vanilla?

not exactly, spigot/paper/purpur servers with plugins and stuff work, and fabric servers with serverside mods that don't require the player to install them also work
I have a fabric server myself with geyser for example, it has origins, waystones, modded terrain, and custom weapons. All work with geyser

So this for fabric 1.21.4, you don't need geyser-standalone for this, just put the stuff in the datapacks folder in the datapacks folder in your world folder and mods in the mod folder. You'll have to delete the old ones and you might have to potentially delete your world if it has custom blocks which geyser can't handle
