I just restarted the game since it had been awhile and with all the new updates

  1. in month 1 day 15, it snowed. The snowy trees lasted an extra day

  2. if you close the tavern and have a guest upstairs and they have a request that is not fulfilled, they stay an extra day

Both of these have only happened once so far

Guests don't leave after one day, they can stay through several, so that part probably isn't a bug
