because if you're talking about "2x the size," then you could simply say it's the size of two objects, but if you're multiplying each dimension by two, you're actually making it the size of 8 of them.

aka, a 1x1x1cm cube and a 2x1x1 cube is the size of two cubes, and could be considered two times the size
but a 2x2x2cm cube contains 8 1x1x1 cubes, meaning that it is 8x the size

for a 1x1x1 cube to be twice the size and keep it's dimensions it would have to add on the volume of another of itself proportionally on all three sides, meaning a 26% increase on all sides (cubed root of 2)
