My suggestion is to make a box with switches first, you can reuse them later, and it will teach you a lot and you also get something that is immediately making your sim flying more realistic

take a pen and paper when you fly a few flights and every time you touch the mouse or keyboard, make a note on it and those that get used most are your first controls for the button box.
