Why using an additionsla ESP32?
I am using an iPad as Display for my G1000 and it can be used with a Screen Capture app like Spacedesk or with the Simionic G1000 App. Why Simionic? I want to use my Panel in an Mixed VR Situation where the Real Hardware Panel is visible in my VR Glasses. But, in VR mode the Panel PopOut not working anymore in MSFS. The Panels are frozen.
Thats why i want to use the Simionic app. But why i need an ESP32 for it?
The thing is how to control the Simionic App. There are three ways. First, without any hardware buttons. Second, with the Simionic Bezel. I have found out that the Simionic App is control able by a Bluetooth keyboard so my way is to use an ESP32 to emulate an Bluetooth keyboard and controls the Simionic app.
The ESP32 is connected over i2c with Mobiflight (as Generic i2c device). When i will press a button on my G1000, Mobiflight detects it and sends a command to the esp32 which will send a keyboard command to the ipad (Simionic App).
I haven't tested it fully (only party) but it should work.

What’s the benefit of using 2 encoders instead of 1 dual one from bourns ?

Not sure how much cheaper it would be tho. Especially if you take your time to build it into account. A bourns dual encoder is like 5 bucks or smth

7€ on Aliexpress and I need 10 pieces for MFD and PFD
20 EC11 encoder costs 10€ on Ali plus a little bit of PLA
but it's a worth discussion. I like to do it most i can by myself because i like to do it
If you want to have it as real as possible than you have to buy dual encoders, for sure
