10kOhm is commonly used, but many values might work also, if you have some potentiometers already, just try.
But if buying new, 10k linear generally works.
connect first pin to gnd, center to an analog pin, and the third to 5V.
It was discussed some time ago almost any potentiometer resistance will work, but 10k ohm is a happy medium compromise for most conditions.
So yes, if you are going to buy, buy 10k pots.
